Sand storage can improve both health and income in rural West-Africa. Trials in Ghana have shown that sweet potatoes stay fresh several months longer when stored in dry sand. With changing weather, farmers are encouraged to grow sweet potatoes as a resilient, nutritious and less labor-intensive crop. Sand storage extending shelf life allows people to sell and eat fresh food for more months of the year, which improves incomes, food security and nutritional status of resource-poor farm families.
